Say ‘hi’ to the team: Laurence

Laurence is a regular fixture at Sailor V, The Winking Prawn, Island Street Bar and Grill or The Cracking Crab so you’ve probably seen him when you’ve popped in for that morning coffee or lunchtime crab salad, but do you know what he does?  Well, we thought we would tell you!  Don’t forget to say ‘hi’ next time you pop by!


What do you do at the Winking Prawn Group?


We have no job titles at the Winking Prawn HQ, I am a partner along with my family of cousins, and my uncle and aunt, but on a day-to-day basis I help to look after all the restaurants making sure everybody is happy!  I only came over from Ireland to work for a summer season and that was eight years ago!  I am also chief beer and wine taster along with Luke, who you have probably seen loitering around.


What does your average day involve?


An average day is spent mainly at the Winking Prawn or Sailor V, working long days, making coffee and trying to make our restaurants run as smoothly as possible! I often spend a few days at The Cracking Crab in Polzeath as well, helping our newest venture to run happily along!


What’s the best thing about working at the group?


The best thing about being in Salcombe, is Salcombe! I couldn’t live without the sea beside me! I love not getting the Tube to work and having a glass of rose in the evening in the summer sunshine.


What’s your favourite thing on the menu?


I have different things for each of the venues! At Island Street Bar and Grill it has to be the Caipirinha, which is a brazilian cocktail.  At the Cracking Crab you can’t beat the Sunday roast, at The Winking Prawn it’s always the steak and halloumi cheese at the summer BBQ, and at Sailor V the freshly made juices are a firm favourite – I particularly like the apple, orange and ginger juice.


What are you most looking forward to this summer?


Sunshine, beaches and bikinis!


When you’re not working hard, what’s your favourite thing to do in the South West?


Simply hanging out with friends.  When my family visit I do all the tourist things that I wouldn't normally do, and go for walks, sit in the sun just chilling out and eating good food!
